1 large sweet potato, wash and dice into small cubes
1 large ripe plantain, diced into small cubes
4 tbsp canola oil
2 cups sweet onion, coarsely chopped
1/2 green pepper, coarsely chopped
1 large onions, coarsely chopped
3 cloves of roasted garlic
1/4 tsp salt
1/4 tsp black pepper
¼ all purpose

Method
Par cook potatoes for 4-7 minutes. Drain the water and set the sweet potato cubes aside to dry while frying your ripe plantain and set aside.
Preheat a wok to medium heat and drizzle 1 tbsp of oil onto the wok.
Add the onion and peppers and sauté until the onion becomes translucent.
Add green peppers, roasted garlic, salt, pepper, and seasoning.
Stir continuously and add the potatoes.
After 2-3 minutes, add the fried plantain and stir well.
Portion onto a plate and serve
