Ingredients
Yam
Vegetable Oil
Pepper
Tomatoes
Onions
1 Inch ginger root
4 Cloves garlic
Salt to taste

Method
Blend the peppers, tomatoes, onion, the garlic and ginger to smooth and set aside.
Slice and peel your yam, cut into small chunks, rinse, then boil on medium heat with salt to taste.
Parboil till slightly tender, not fully soft, remember it’ll be cooked further later.
Saute onions in a saucepan and add blended vegetables when it begins to turn brown.
Add your spices and salt after 10-15 minutes.
Add the yam and cover to cook.
When the yam is softened, mash half of the Yam using a Potato masher or wooden spoon.
Lower the heat and let it simmer for 5 minutes and serve
