
…Lawrence Cofie, also known as Chef Kwamz, winner of Kempinski Gold Coast City Hotel’s first ever Master Chef competition back in 2018. At the time, he was ‘commis chef’ – junior cook – at Kempinski, having recently honed his skills acquiring his diploma in the art and culture at Flair Catering Institute at Cantonments in Accra.
He has, since, besides Kempinski, had stints at Tang Palace Hotel, among other places. But, wanting to do more in the sphere of reimagining Ghanaian flavours in elegant bites, he has ventured out on his own, offering bespoke culinary solutions to people who want to have private dining experiences at home, and as often as possible.
Chef K, another name he responds to, has thrown together recipes of local ingredients, creating outcomes that add that certain “Je ne sais quoi” to his cuisine, giving even everyday mundane dishes a look and taste that few can replicate.
Take his ‘Koko Panna Cotta’, for instance. He’s given the traditional Italian gourmet custard recipe a Ghanaian makeover that just enhances the millet porridge to indulgence status.
Part of the current wave of foodie revolutionaries aiming to put the spotlight on traditional Ghanaian cuisine, Chef K has created the Akwantu Canapé Series, and hosts tasting parties which bring people together to celebrate “and journey through the richness of our food culture, one refined canapé at a time,” as he puts it.
Look out for an Akwantu event near you soon. When you get the chance to attend one – they tend to be rather intimate affairs admitting few people – do yourself a favour and go. You’ll be in for a delicious treat!
